Hagi ware is famous in Japan for the colour changes it takes on as tea is slowly absorbed into the cracks of the glaze with use. This change is known as “raising” the tea ware. The simple and rustic appeal of Hagi ware places it as the second most precious tea ware in Japan among Raku and Karatsu ware.
Matcha tea needs a different type of preparation than other teas. Because of the super fine grinding of the leaves (think talcum powder), the tea is traditionally whisked in a bowl with high sides. The whisking prevents clumps of tea powder sticking together, like a bad batch of chunky gravy! The high sided bowl keeps the tea from splashing around. This preparation is part of the beauty of this tea and forces you to take a some time and care. A nice way to start your day, or take your mind off of other concerns for a few moments. Once made, the tea is enjoyed directly from the bowl.
